What a wonderful cold weather pastime... watching the chickadees and cardinals feed on a snowy evening. Colonial Birdhouses Bird House and Bird Feeder Kits Storey Country Wisdom Bulletins ATTENTION: With the volume of orders that came in over the past few weeks, we have noticed a trend that causes us some grave concern. Dozens of orders were called in on cell phones. It is our practice, once the information is collected, to repeat back the information so as to eliminate any errors. We felt very uncomfortable doing this BECAUSE cell phones use open airwaves. Anyone that possesses the knowledge and technology can tap into those airwaves and listen in. Therefore, that person can collect any information that is discussed over a cell phone conversation. This is a flagrant breach of privacy and security and we are concerned for our customers. Although we are not aware of any problems thus far, we strongly suggest that any orders placed specifically with personnel and credit card information, be done on a secured land line ONLY...!!! An ounce of prevention is worth a pound of cure. We are more than happy to take phone orders and realize that many customers feel more comfortable doing it that way. However, using a cell phone to place your order is actually more dangerous that placing an on-line order. It is more probable for some to tap into a cell phone, while it is virtually impossible for someone to tap into out secured servers. So, Please, please, please place your order from home, at your work desk or kitchen table from a phone that is attached to your wall. Make it your New Year resolution for 2004... tuck that cell phone away. No doubt about it, the holidays can be stressful. There are some things that will not be forfeited to ease the stress... and that is baking all of those special cookies each year. Every family has their own favorites without which Christmas would be just another day. The trick is, find something that takes less time and looks elegant, and, tastes absolutely wonderful. Our recipe for Vanilla Balls couldn't be easier. This melt in your mouth, nutty delight has been a Christmas favorite in our house for thirty years, now, and I must say, it is one cookie that I have been known to hide when the family was younger. Whether you call them Butter Balls or Mexican Wedding Cookies, the result is just the same... a crumbly, buttery confection filled with finely chopped walnuts and rolled in confectioners sugar. I make two, sometimes three times this recipe. One is certainly not enough. Then, just stand back and watch them disappear...! VANILLA BALLS Vanilla Sugar: Add the vanilla to the sugar and mix well. Rub through a sieve. Prepare before making cookies so it will have time to dry. This is one time that it is okay to use your fingers. Vanilla Balls: Cream the butter. Beat in the vanilla and the sugar. Sift the flour and sugar together. Add gradually to the creamed mixture. Mix in the chopped nuts. Chill for about forty-five minutes. Pinch off pieces of dough and roll into a ball about 1 1/4 inches in diameter. Place two inches apart on greased baking sheet. Bake in 325-degree oven for twenty minutes. Take from sheet and roll in vanilla sugar while still warm. The easiest way to do this, I find, is to put the vanilla sugar in a plastic zip-lock bag or brown paper bag and shake the cookies in the sugar. Gently, please. Yield: about three dozen cookies.
