Aunt Mary's Roasted Carrots and Parsnips
With Optional - Orange Glaze Sauce

Serves 8



1 pound fresh garden carrots (6 to 7 medium), washed and peeled. Cut into 2-inch-long sticks, each about 1/4 inch thick
2 pounds fresh garden parsnips (6 to 7 medium), washed and peeled. Cut into 2-inch-long sticks, each about 1/4 inch thick
4 Tablespoons olive oil
salt and pepper
garlic powder (optional)
orange glaze sauce (optional - see recipe below)

Garnish: Fresh garden parsley

Preheat your oven to 425°F.

Divide carrots and parsnips between 2 shallow baking pans. Toss each pan of vegetables with 2 tablespoons of olive oil. Spread the vegetables on one layer. Season with salt and pepper (Garlic powder - optional). Roast vegetables in oven. Stir vegetables occasionally. If you have a wide enough oven, omit the next step. Midway through the baking, switch positions of the pans in the oven. They cook in about 20 to 25 minutes, or wait until they are browned and crisp. Serve as is, or with the orange glaze sauce, garnished with fresh garden parsley.

This easy to prepare dish is excellant anytime with a roast and a rich gravy. Great during the fall harvest, Halloween and Thanksgiving. If you grow your own parsnips, wait till after the first frost to harvest your parsnips. They will be much sweeter.

Optional - Orange Glaze Sauce:

1 Tablespoon brown sugar, granulated;
1 teaspoon cornstarch;
1/4 teaspoon salt;
1/4 teaspoon ginger;
1/2 cup orange juice;
1 Tablespoon butter or margarine.

In a small saucepan combine the brown sugar, cornstarch, salt, and ginger. Add the orange juice. Cook and stir till thickened and bubbly. Then cook and stir 1 to 2 minutes more. Stir in the butter or margarine. Spoon over the hot roasted carrots and lightly over the roasted parsnips. These are Hmmm... Good...!
