Yankee Harvest Recipes
Mark's Early Garden Potato Salad
Serves 4-5
1 1/2 pounds baby (new) potatoes
Fresh Vinaigrette Dressing
3 Tablespoons white wine vinegar or apple cider vinegar
2 Tablespoons freshly squeezed lemon juice
1 teaspoon freshly grated lemon zest
2 teaspoons prepared Dijon mustard
2 Tablespoons freshly chopped basil
1/2 teaspoon freshly chopped oregano
2 Tablespoons freshly chopped parsley
1/4 cup olive oil
1/4 cup thinly sliced scallions
1/4 cup thinly sliced radishes
1/2 cup halved Greek olives, (Your choice) with pits removed
Pepper, freshly ground to taste
Sea Salt, to taste
6 fresh lettuce leaves
Garnishes
1/2 cup freshly crumbled feta cheese
4 ounces freshly chopped dried salami (Your Favorite Brand)
Cook potatoes until just tender. While potatoes are cooking, prepare dressing: combine all ingredients except oil, then whisk in oil gradually, blending until thoroughly combined. Drain potatoes, cut in half, and toss with the dressing. Let mixture cool. Add scallions, radishes, and olives and toss together. Add salt and pepper to taste. Serve on a bed of lettuce leaves and garnish with feta cheese and chopped salami.
Serve this salad with your favorite beverage.
