Yankee Harvest Recipes
Fresh Toasted Sesame Spinach and Garlic Broccoli
Serves 2 to 3.
2 to 3 cups of broccoli, freshly picked from your organic vegetable garden.
2 cloves of fresh garlic from your organic herb garden, minced.
1 Tablespoon sesame seeds from your kitchen pantry.
2 Tablespoons vegetable oil.
1/4 teaspoon dried hot red pepper flakes from your kitchen pantry.
1/2 red bell pepper, picked from your organic vegetable garden, diced.
5 to 6 cups of fresh spinach, picked from your organic vegetable garden.
2 teaspoons sesame oil.
Salt, plain or iodized, to taste.
- Cut the garden broccoli into 1-inch flowerets. Cut the stems into 2 inch x 1/4 inch lengthwise sticks (like French Fries).
- In a dry 10 inch heavy frying pan, toast the sesame seeds over moderate heat. Keep stirring, until they are golden. Spoon them to a small metal bowl.
- Peel and mince the fresh garlic cloves.
- Clean and prepare your red bell pepper, diced.
- In a heavy skillet, add and heat the vegetable oil until hot, but not smoking. Add the broccoli, garlic, and red pepper
flakes. Stir occasionally, and cook until the broccoli is crisp-tender, about 7 to 8 minutes.
- Add the diced red bell pepper, spinach and cook, stirring, until the spinach is wilted, about 2 minutes.
- Remove the skillet from the stove.
- Mix the cooked vegetables with the sesame oil, toasted sesame seeds, and salt to taste.
This is a very easy and quick to prepare dish, right from your organic garden. A summer treat...!
