Yankee Harvest Recipes
Maria's Chicken Breasts In Fresh 3 Cheese Tomato Sauce
Serves 6
6 boneless, skinless, fresh chicken breast halves. (Follow safe handling instructions)
1/2 cup, All purpose flour, as required, from the kitchen pantry
1/4 cup olive oil, from the kitchen pantry.
1/2 large onion, chopped, fresh from the vegetable garden.
3 large garlic cloves, chopped, fresh from the herb garden.
1 15 ounce can tomato sauce.
1 15 ounce can Italian style stewed tomatoes.
1/2 can (Drained) of a 4 ounce can of stems and pieces or sliced mushrooms. (Optional if allergic to mushrooms)
1 Tablespoon dried oregano, from the herb pantry.
1/3 cup dry Italian white wine. (Not spoiled or changing to vinegar)
2 bay leaves.
Salt, plain or iodized, to taste.
Freshly ground pepper, to taste.
8 ounces penne, or your favorite Italian pasta, freshly cooked.
1 cup freshly grated Italian Mozzarella cheese.
1/3 cup freshly grated Italian Romano cheese.
1/3 cup freshly grated Italian Parmesan cheese.
1 9 x 13 x 2 inch high, glass, oven baking dish.
BAKING SAFETY HINT: Please double check your oven area, and remove ALL unwanted items from it, BEFORE you turn it on. Ovens have a habit of becoming storage places. Open your oven door and check inside...!
Close and preheat your oven to 375°F.
- Prepare a pot of boiling water and cook your pasta, and drain.
- In a large frying pan, add the olive oil, heat over high heat. Do not burn or smoke the oil.
- Dredge the chicken or shake in a bag, with flour, seasoned with salt and pepper.
- Add chicken to frying pan and cook each side, until outside is white. Move the cooked chicken to a side plate. Reduce stove heat.
- To the frying pan, add onion, garlic, oregano and cook until the onion begins to soften.
- Add tomato sauce, stewed tomatoes with all their juices, mushrooms, white wine and bay leaves. Cook 8 to 10 minutes or until the sauce thickens. Break up any large tomatoes. Discard the bay leaves.
- Butter the 9 x 13 x 2 inch glass, oven baking dish.
- Line the buttered dish with the freshly cooked penne or pasta.
- Arrange the chicken over the pasta.
- Spoon the thickened sauce over, covering the chicken and pasta completely.
- Mix the 3 grated cheeses completely in small bowl. Sprinkle the cheeses evenly over the sauce.
- Bake 20 to 25 minutes until the chicken is cooked and the sauce bubbles briskly.
This is a very easy and quick to prepare, right from your garden and kitchen. A real family or party treat...!
